Maaaa! Crockpot Meatloaf

What?! Meatloaf in a crockpot???

Seriously, don't go, just listen--even if you don't normally like meatloaf you will probably enjoy this dish!

That's absolutely right. We know we shocked you with crockpot lasagna, and we weren't kidding when we said you can really make just about ANYTHING in a crockpot! And it actually tastes really good. Jasmine, our pickiest eater, told us "I don't really like meatloaf...but this meatloaf I actually do like. It is so good!" If you know Jasmine, you know what a serious endorsement that is.

And of course we made it even easier by tossing these adorable, colorful mini potatoes right into the crockpot to cook with the meatloaf. Just like that you have another quick, easy, delicious meal the whole family will enjoy.

2 lb ground meat

1/3 c onion

2 eggs

3/4c dry breadcrumbs

3/4c milk

1 envelope dry onion soup mix

Salt, pepper, Italian seasoning to taste

3 blobs Ketchup

1 blob Mustard 

1 blob BBQ Sauce 

3 splashes Worcestershire sauce

2 splashes Soy sauce 

Mix together meat, onion, eggs, breadcrumbs, milk, onion soup mix, and seasonings until thoroughly combined. Place in crockpot and form into a smooth loaf. In a separate bowl combine ketchup, mustard, bbq sauce, Worcestershire and soy sauce. Brush sauce mixture evenly over meatloaf. Cover and cook on low for 6 hours.

Optional: Top meatloaf with thin layer of whole mini potatoes or chopped regular potatoes to cook as a side dish with your meatloaf.

Tip: To retain moisture and remove meatloaf from crockpot easier, line crockpot with foil or crockpot liner before adding the meatloaf .
